Gyros with Greek Chicken, Tzatziki and Homemade Greek Pita Flatbread Isn’t Greek food amazing? I’ve never been a huge fan until pretty much the last year. I live in the midwest and have temporarily moved to the East coast and there is SO much more Mediterranean food here than where I’m from. We had some delicious gyros last week at a restaurant so it inspired me to create some at home. Yes, these have a lot of steps and they can seem to have a lengthy prep but if you do it all from scratch you’ll be glad you did. Although, if you are looking to make it a little bit healthier you could simply omit the pita altogether and just make it into a salad (which is what I did the second day). Another option would be to serve it over lemon mint rice instead of pita. Don’t get me wrong, the homemade pita is delicious, especially right when it comes off the hot skillet, but lets be honest – we don’t often have a lot of time to make the entire meal from scratch. Horiatiki salad Ingredients 125 g greek feta 2 green peppers 1 cucumber 1 small red onion 5 ripe tomatoes 1 handful of kalamata olives 1 tesapoon dried oregano 3-4 tablespoons extra virgin olive oil 3-4 tablespoons red wine vinegar Method Crumble the feta into chunks, deseed and slice the peppers, and peel and slice the cucumber and onion. Slice the tomatoes. Combine all the ingredients except the oregano, oil and vinegar in a salad bowl. Just before serving, sprinkle the salad with the oregano, season with freshly ground black pepper and dress with the oil and red wine vinegar.

Vegan Chocolate Chip Cookie Ice Cream Sandwiches Ingredients for 5 sandwhiches ½ cup (100 g) granulated sugar ¾ cup (165 g) dark brown sugar, packed 1 teaspoon salt ½ cup (120 mL) refined coconut oil, melted ¼ cup (60 mL) oat milk 1 teaspoon vanilla extract 1 ½ cups (185 g) all-purpose flour ½ teaspoon baking soda 8 oz (225 g) vegan chocolate chips 2 pt (575 g) vegan vanilla ice cream vegan dark chocolate, in small chunks, for garnish, optional Preparation In a large bowl, whisk together the granulated sugar, brown sugar, salt, and coconut oil until combined. Whisk in the oat milk and vanilla, until the sugar has dissolved and the batter is smooth. Sift in the flour and baking soda, then fold the mixture with a spatula, being careful not to overmix, until just combined. Fold in the chocolate chips. Chill the dough for at least 30 minutes.
